A Labor Day of Cook AND Freeze!!

I DID IT!  I am so excited, proud of myself, and EXHAUSTED!  I have many friends that cook and freeze and have been a tad envious of the fruits of their labors.  So since it is LABOR DAY, I decided to labor away the day...in the kitchen. 

Many of you know I am now working full time outside of my home and also part-time in the evenings, so dinner prep must be SIMPLE.  I took advantage of my wonderful day off, and got busy.  I must brag just a tiny bit on all that I have accomplished.

2 dozen muffins made - 1 dozen eaten, 1 dozen frozen

Taco meat for 2 taco dinners

Meat for empanadas

Ground beef for spaghetti with marinara sauce

1 upside down pizza

Cubed chicken for Sundried Tomato Chicken Alfredo

Shredded chicken for Lisa's Rice and Chicken

Shredded beef for barbeque sandwiches

Chocolate Chip Cookies - I guarantee there will not be any left for freezing by the end of the evening!

Okay - now that I have it typed out it doesn't look like that much!  But, I am still excited.  It will be so nice to come home after a very tiring day and already have the main part of my meal done. I also have ALL ironing done for the next 5 days for 4 out of 5 family members.  PRESSON PROGRESS!   I am done bragging on myself.  I did have a very handsome person who cleaned up after me in the kitchen.  I love him!   Hope you all had a wonderful Labor Day!

  3. Girl- you go with your bad self. What a great Mom you are. And you have every reason to brag. What a job. I was just proud of myself for making soup from scratch last night :) Can you send me your empanada recipe?
